Ingredients:
- 2 thinly sliced skinless, boneless chicken breasts
- 4 pitas are hollow inside
- Lime or lemon juice
- 2 tbsp. l. olive oil
- 2 peeled cloves of garlic
- 1 teaspoon ground coriander
- 1 tsp ground cumin
- Salt and freshly ground black pepper
- 1/2 cup mint or cilantro leaves for marinade
- 1 cup natural yogurt
- 1/2 cucumber, sliced
- 1 chopped tomato
- 2 tablespoons chopped mint for dressing
- Mixed salad leaves
Preparation:
- In a blender, combine lemon juice, a tablespoon of olive oil, garlic, coriander, cumin, salt, pepper, and mint or cilantro leaves.
Blend until smooth and pour over the chicken as a marinade. Refrigerate the chicken and let it marinate for 30 minutes. In a small bowl, combine the yogurt, cucumber, and chopped mint.
- Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally.
Heat the pitas under a broiler or grill. Open the pitas, fill them with chicken, tomatoes, lettuce, and drizzle with the yogurt dressing. Serve immediately.
