Beef Pita Pizza

Ingredients:

  • 4 whole grain pitas without hollow inside
  • 225 g of ground beef (10% fat)
  • 3 tbsp. l. olive oil
  • 1 medium onion, finely chopped
  • 1 medium red bell pepper, finely chopped
  • 1 head of torn green salad leaves
  • 1/2 cup pickled beets, cut into small pieces
  • 1 small cucumber, peeled and cut into half circles
  • 2 tbsp tomato paste
  • Salt and ground pepper
  • 1/2 cup natural Greek yogurt (2% fat)
  • 1 tbsp red wine vinegar, plus 2 tsp.

Preparation:

  1. Position a rack in the upper third of the oven and preheat to 400°F (205°C). Heat a tablespoon of olive oil in a large nonstick skillet over medium-high heat. Add the onion and bell pepper and cook, stirring occasionally, until golden brown, 6-8 minutes. Add the tomato paste and cook for another minute, stirring occasionally, until it turns a brick-colored color.

    Add the beef, 2 tablespoons water, 3/4 teaspoon salt, and pepper to taste. Cook, breaking up the ground beef, until browned, 3-4 minutes. Remove from heat, stir in 1/4 cup yogurt and 2 teaspoons red wine vinegar. Season with salt and pepper and transfer to a bowl.
  2. Wipe out the skillet and return to medium heat. Brush the pitas with a tablespoon of olive oil, then lightly pan-fry them, about 45 seconds per side. Place the pitas on a baking sheet and spread the beef mixture evenly over them. Place in the oven and bake for 6 minutes.
  3. In a bowl, combine the remaining 1/4 cup yogurt, a tablespoon each of olive oil and vinegar, and salt and pepper to taste. Add the lettuce, beetroot, and cucumber and toss to combine. Slice the pizza and serve with the salad.
