Irish soda bread

Ingredients:

  • 450 g (3 and 1/4 cups) premium white wheat flour
  • 1/2 tsp salt
  • 1/2 teaspoon baking soda
  • 350 - 412 ml of sour milk or buttermilk for mixing

Preparation:

  1. First, preheat the oven completely to 230°C.

    Mix the dry ingredients. Make a well in the center. Pour in the sour milk all at once. Using one hand, fold in the flour from the edges of the bowl, adding more sour milk if necessary.

    The dough should be soft, but not too wet or sticky. Once all the flour has been incorporated, turn it out onto a well-floured surface.
  2. Next, lightly knead the dough until it's smooth and turn it over. Form the dough into a circle approximately 25-30 cm in diameter.

    Bake in a hot oven for 15 minutes, then reduce the temperature to 200°C for 30 minutes, or until done. If you're unsure whether the bread is done, tap the bottom; it will sound hollow.
