Ingredients:
- 3-4 green plantains
- 2 fresh limes
- 2 tbsp sweet chili sauce
- 1 tbsp sweet and hot mustard
- 1 teaspoon of prepared horseradish
- 1 tbsp. l. natural rice vinegar
- Canola oil for frying
- 1/4 cup minced garlic
- Salt and crushed black pepper
- 1/8 tsp red pepper flakes
- A pinch of cayenne pepper
Preparation:
- In a bowl, combine the juice of 1/2 lime, sweet chili sauce, mustard, horseradish and vinegar.
Heat oil in a heavy skillet to a depth of 1.5 cm. Cut the plantains diagonally into 2.5 cm thick slices. Peel off the skins.
When the oil is hot, add the plantains to the pan and fry on both sides until golden brown.
- Transfer the plantains to a paper towel to absorb excess oil and sprinkle with salt and minced garlic. Using a glass, heat-proof bowl, crush the plantains, pressing the garlic into them to form flat cakes. Return them to the hot oil and fry until dark golden brown. Remove and return to the paper towel, adding more coarse salt to taste, red pepper flakes, cayenne pepper, and lime juice.
Serve hot with sweet and spicy With mustard sauce.
