Brush the sandwiches with butter, then sear them in a cast-iron skillet over medium-high heat, pressing down with a heavy pan, for 2 minutes. Flip them over, reduce the heat to medium-low, and cook, pressing down, until golden brown, another minute.

Quick Pickled Cucumbers: Bring 3/4 cup water, 1/4 cup vinegar to a boil, add 3 tablespoons chopped onion, 1 tablespoon each salt and sugar, 1 teaspoon red pepper flakes, and 3 crushed garlic cloves. Cook, stirring, for 2 minutes. In a bowl, pour this marinade over 1 large, peeled, sliced ​​cucumber and toss to combine. Refrigerate for 15 minutes.
