Ingredients:
- 1 large head romaine lettuce, chopped
- 1/2 cup olives
- 1/2 cup large capers
- 1/2 cup chopped peppadew pepper
- 1 small cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 head of red onion, thinly sliced into half rings
- 2 tablespoons red wine vinegar
- Salt and ground black pepper
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1/2 tsp dried oregano
Preparation:
- In a large bowl, whisk together the vinegar, lemon juice, oregano, and 1/4 teaspoon each of salt and pepper. Slowly whisk in the olive oil until smooth.
Place the cucumber, tomatoes, lettuce, olives, capers, pepper, and red onion in a bowl with the dressing and toss to combine. Season with salt and pepper.
