Noodle and sesame salad

Preparation:

Prepare 230 grams of dried udon noodles According to package directions, drain and let cool. Grill 1 bunch green onions, turning, until grill marks appear, 3 minutes. Cool and slice.

In a large bowl, combine 3 tablespoons each of tahini, soy sauce, and rice vinegar with 2 teaspoons each of dark sesame oil, sugar, and grated ginger. Add 1–2 tablespoons of water and stir until smooth.

Add the noodles, fried green onions, 2 cups bean sprouts, and 1 cup each cooked edamame, shredded carrots, and julienned snow peas; toss to combine. Sprinkle with toasted sesame seeds.
