Homemade Herb Crackers topcook.tomathouse.com
Ingredients:
- 1.5 cups premium wheat flour
- 1/2 cup whole wheat flour
- 3 tbsp (45 g) salted butter, room temperature
- 1 teaspoon salt, plus extra for sprinkling
- 3 tbsp. l. grated onion
- 3 tbsp chopped herb mixture, such as thyme and chives
- 1/2 cup whole milk
- 1 egg white, beaten
- 1 tbsp seeds, such as sesame or poppy seeds
Preparation:
- Preheat oven to 230°C.
- Combine the wheat flour, whole wheat flour, butter, and salt in the bowl of a stand mixer fitted with a beater attachment. Mix on medium speed until the mixture resembles coarse meal. Add the onion, herbs, and milk; mix until combined—do not overmix.
- On lightly floured parchment paper, roll the dough into a rectangle about 0.5 cm thick. Brush the top with egg white and sprinkle with seeds and a little salt.
- Transfer the parchment paper with the dough to a baking sheet and cut into 5 x 7.5 cm rectangles.
- Bake crackers until golden brown, 10 to 12 minutes.
