Energy bars

Ingredients:

  • Non-stick cooking spray
  • 1 cup quick-cooking oats
  • 1/2 cup raw sunflower seeds
  • 1/2 cup toasted wheat germ
  • 1/4 cup whole wheat pastry flour
  • 1/2 cup dried apricots
  • 1/2 cup raw almonds
  • 1/2 cup raisins
  • 1/2 cup dried pitted dates
  • 1/2 tbsp. low-fat dry milk
  • 1/2 tsp ground cinnamon
  • 1/3 tbsp. pure maple syrup
  • 2 large eggs

Preparation:

  1. Preheat oven to 180°C. Spray a 22 x 33 cm baking dish with cooking spray.
  2. Place all ingredients except the eggs and syrup in a food processor and blend well. Add the eggs and syrup and begin blending. The mixture will resemble a coarse paste.
  3. Transfer to a baking pan and spread evenly. Bake for about 20 minutes until set. Cut the mixture into 20 energy bars.
