Ingredients:
- 3/4 cup margarine
- 1 cup brown sugar
- 1 large egg, lightly beaten
- 1/4 cup light molasses
- 2 and 1/4 cups premium flour
- 2 teaspoons of baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 0.5 tsp ground cloves
- 1/4 teaspoon salt
- Granulated sugar for rolling
Preparation:
- In a large bowl, combine the margarine and brown sugar. Using an electric mixer on medium speed, beat until smooth. Add the egg and molasses; beat until light and fluffy.
- In a medium bowl, combine the flour, baking soda, cinnamon, ginger, cloves, and salt. Beat the mixture into the wet ingredients on low speed. Chill the dough for 3 hours or overnight.
- Preheat oven to 350°F (175°C). Roll the dough into 2.5cm diameter balls; dip one side in sugar. Place them on an ungreased baking sheet, sugared side up, spacing them 2 inches apart.
- Bake the cookies for 12-15 minutes. Let cool on a wire rack.
