Mini ice cream and cookie sandwiches topcook.tomathouse.com
Ingredients:
- 1/2 cup low-fat vanilla ice cream, or frozen yogurt, softened at room temperature
- 24 vanilla shortbread cookies (4 cm in diameter)
- 80 g of cherries
- 30 g crushed pistachios
Preparation:
- Line a shallow food storage container with wax paper. Combine softened ice cream with chopped cherries and pistachios. Spread a small scoop of ice cream (about 2 teaspoons) on half of the cookie and top with the other half. Roll the sandwich in finely crumbled pistachios until they adhere to the ice cream.
- Place a mini sandwich in a container. Assemble the remaining 11 ice cream sandwiches.
Cover the container and freeze for at least 30 minutes. Ice cream sandwiches can be frozen for up to 1 week.
