French gingerbread

Ingredients:

  • 3 cups premium flour
  • 1 cup of sugar
  • 1 teaspoon baking powder
  • 0.5 tsp salt
  • 1 tbsp. ground ginger
  • 1.5 tsp ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon anise seeds
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 large eggs
  • 1/4 cup buckwheat honey
  • 1 cup of warm water
  • 4 tbsp dark rum

Preparation:

  1. Preheat oven to 190°C. Grease and sprinkle with sugar (preferably Demerara) a 20cm square or round cake tin.
  2. Sift together the flour, sugar, baking powder, salt, and spices. In a separate bowl, whisk together the eggs, honey, water, and 2 tablespoons of rum. Add to the dry mixture and stir. Pour the thick batter into the prepared pan and smooth the surface.
  3. Bake for 20 minutes, then reduce the oven temperature to 160°C (325°F). Bake for about 30 more minutes, until a tester inserted into the center of the cake comes out clean. Brush the warm bread with the remaining 2 tablespoons of rum.
