Baked pears wrapped in bacon and stuffed with goat cheese

Ingredients:

  • 12 small pears
  • 220 gr. goat cheese
  • 1/4 cup mixed chopped herbs, such as parsley, thyme, and chives
  • 2 tbsp olive oil + extra for drizzling
  • 12 slices bacon, about 220g, halved
  • 2 tablespoons of honey
  • Arugula or dandelion leaves for serving

Preparation:

  1. Preheat oven to 190°C.
  2. In a small bowl, combine goat cheese, herbs, and 2 tablespoons olive oil; season with salt and pepper. Cut the pears in half and scrape out the seeds and cores.
  3. Place about 1 tablespoon of cheese in each pear half. Wrap the pear halves in bacon slices and place on a baking sheet. Drizzle with a little olive oil, season with salt and pepper. Bake the pears until soft and the bacon is crisp, about 25-30 minutes.
  4. Place the pears on a plate, drizzle with honey and garnish with arugula.
