Ingredients:
Cake
- 220 g of butter at room temperature
- 2 cups premium flour
- 0.5 cup powdered sugar + extra for sprinkling
Filling
- 4 large eggs
- 5 tablespoons freshly squeezed lemon juice (from about 2 large lemons)
- 2 tablespoons grated lemon zest
- 2 cups granulated sugar
- 1 tbsp flour
- 1 teaspoon baking powder
- 0.5 tsp salt
Preparation:
- Preheat the oven to 350°F (175°C). Melt the butter in a medium saucepan. In a bowl, combine the flour and powdered sugar and add the melted butter, kneading the dough. Press the dough into the bottom of a 22x32x5 cm (9.5x13.5x2 in) springform pan and press firmly into place. Bake for 25 minutes.
- While the crust is baking, beat the eggs, lemon juice, and zest with a mixer until smooth. Add the granulated sugar, flour, baking powder, and salt and beat until smooth. Pour the mixture over the baked crust. Bake for another 20 minutes.
- Remove the pan from the oven and let it cool completely. Sprinkle the top with powdered sugar. Cut into squares and serve.
