Ingredients:
- 700 g pork tenderloin, cut into 4 pieces
- 700 g new red potatoes with skin, halved
- 1 red bell pepper, diced (about 2.5 cm)
- 2 teaspoons fresh thyme
- 1.5 tbsp. l. olive oil
- Salt and freshly ground pepper
- 1 cup apple sauce
- 1/4 cup low-fat sour cream
- A little freshly grated nutmeg
Preparation:
- Preheat oven to 190°C (375°F). Combine potatoes, bell peppers, thyme, 1 tablespoon olive oil, 1/2 teaspoon salt, and pepper to taste in a shallow baking dish. Bake for about 20 minutes.
- Meanwhile, in a small bowl, whisk together the applesauce, sour cream, and nutmeg; set aside.
- Pound the pork pieces, pat dry, and season with salt and pepper. Heat a large, shallow frying pan with the remaining olive oil and brown the pork on all sides over medium-high heat, about 6 minutes. Place the pork in a baking dish with the vegetables and continue baking for another 15-20 minutes. Transfer the pork to a cutting board and let rest for 5 minutes before slicing.
- Divide the pork among portions with the baked vegetables and pour over the thick apple sauce.
