Baked root vegetables

Preparation:

Cut 1 pound each of carrots and parsnips and 2 celery roots into 0.8-inch pieces. Toss on a rimmed baking sheet with 4 tablespoons of melted butter, salt, and pepper. Bake at 400°F (200°C) until the vegetables are tender and golden brown, 30 minutes. Sprinkle with finely chopped parsley.
