Spinach and Green Apple Salad

Ingredients:

  • 150 g spinach leaves
  • 1 Granny Smith apple
  • 2 tbsp. l. olive oil
  • 1 tbsp. apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/3 cup walnut pieces, toasted in a dry skillet over medium-high heat until fragrant, about 2 minutes

Preparation:

  1. In a small bowl, whisk together the olive oil, vinegar, and mustard. Season with salt and pepper to taste.
  2. Drizzle the dressing over the spinach, toss to coat evenly, then divide the spinach among 4 serving bowls.
  3. Core the apple and cut into strips. Place a quarter of the apple on each serving of salad. Sprinkle with walnuts and serve immediately.
