Roasted Zucchini with Herb Salt and Feta topcook.tomathouse.com
Ingredients:
Seasoned salt
- 0.5 cup coarse salt
- 1.5 tsp dried oregano
- 1.5 tsp dried thyme
Grilled Zucchini
- 3 medium zucchinis, ends trimmed, zucchini cut lengthwise to a thickness of 0.5 cm.
- Olive oil, for greasing
- 0.5 cup crumbled feta
Preparation:
- Seasoned salt: In a small bowl, combine salt, oregano and thyme and stir to combine.
- Grilled Zucchini: Brush both sides of the sliced zucchini with olive oil and season with salt. Place the zucchini in a grill pan over medium heat and grill until tender, about 5 minutes, turning once. Transfer the zucchini to a serving platter and sprinkle with feta cheese.
Note Leftover seasoning salt can be stored for another use. It's a great all-purpose seasoning.
