Ingredients:
- 1 can (425 g) of canned green peas, drained
- 0.5 cup mashed avocado (about 1 medium avocado)
- 1/4 cup plain Greek yogurt, nonfat
- 4 tsp lime juice
- 0.5 tsp crushed garlic (about half a clove)
- 1/4 tsp salt + more to taste
- 1/8 tsp black pepper + more to taste
- 1/8 tsp ground cumin
- 1/8 tsp chili powder
- 1/3 cup chopped grape or cherry tomatoes
- 1/4 cup finely chopped onion
- Chopped fresh cilantro (optional)
- Sliced pickled jalapeños (optional)
Preparation:
- Place the peas in a medium bowl and mash thoroughly with a potato masher or fork. (Or, puree the peas in a small blender or food processor until smooth and transfer to the bowl.) Add the avocado, yogurt, lime juice, garlic, 1/4 teaspoon salt, 1/8 teaspoon black pepper, cumin, and chili powderContinue kneading to combine everything.
- Stir in the tomatoes, onion, and some cilantro and/or jalapeño, if using. Season with salt and pepper to taste.
