Fried pork tenderloin topcook.tomathouse.com
Ingredients:
- 0.5 cup soy sauce
- Juice of 2 oranges
- Juice of 1 lime
- 0.5 tbsp. tamarind concentrate
- 1 tbsp Dijon mustard
- 1 teaspoon ground ginger
- 1 clove garlic, crushed
- 1 tbsp chopped green onions
- 1 pork tenderloin (about 350 g)
- Olive oil to grease the grill
Preparation:
- Combine all marinade ingredients in a measuring cup. Place the tenderloin in a resealable plastic bag. Pour the marinade over it and seal the bag. Marinate overnight in the refrigerator.
- Preheat an outdoor grill or oven to 350°F (175°C).
- Remove the pork from the marinade and pat dry with paper towels. Brush the grill grate and meat with olive oil for added flavor. Set the marinade aside. Grill the pork tenderloin until done, about 30-40 minutes over medium heat. Or bake in the oven for 35-45 minutes. Let the cooked pork rest for about 10 minutes, then slice into 2-inch-thick pieces.
- While the meat is frying, pour the marinade into a small saucepan and bring to a boil. Then reduce the heat and simmer until the sauce has reduced to 2 tablespoons. Stir occasionally. Drizzle each piece of meat with a small amount of the sauce.
