Hot Cheddar Sandwich

Ingredients:

  • 4 tbsp (60 g) butter, room temperature
  • 1/4 cup mayonnaise
  • 0.5 tsp smoked paprika
  • 8 slices sourdough bread
  • 2 tablespoons cream cheese, room temperature
  • 1 cup grated cheddar

Preparation:

  1. Heat a skillet over medium heat. In a small bowl, combine the butter, mayonnaise, and smoked paprika, distributing the ingredients evenly. Season with salt and pepper.
  2. Lightly spread one side of each slice of bread with the mayonnaise mixture. Add the cream cheese to the remaining mayonnaise mixture and mix well to distribute evenly. Spread some of the cream cheese mixture on the other side of each slice of bread.
  3. Sprinkle cheddar on the cheese side of 4 slices of bread. Top with the remaining 4 slices. Place the sandwiches in the skillet and cook until golden brown, about 3 minutes. Flip the sandwiches, place another heavy skillet on top, and cook until the bread is golden brown on the other side and the cheese is melted, about 4 minutes.
