Ingredients:
Sandwiches
- 2 English muffins, cut in half horizontally, or 4 slices rye or whole grain bread
- 2 tbsp. ready-made mayonnaise (optional)
- 1 serving tuna salad, see recipe below
- 1 cup grated sharp cheddar
Tuna salad
- 2 x 170g cans of albacore tuna in its own juice, drained
- 2 tablespoons chopped celery stalk
- 2 tablespoons chopped red onion, soaked in cold water for 5 minutes (drain)
- 1 teaspoon chopped parsley
- 1/3 cup ready-made mayonnaise
- 1 tbsp. grainy mustard
- Freshly squeezed lemon juice, to taste (optional)
Preparation:
- Preheat oven to grill mode and position the rack approximately 10-12 cm from the heating element.
- Place the bread on a baking sheet and toast. Spread the toasted English muffins or mayonnaise on the bread, if using. Top with tuna salad and sprinkle with grated cheese.
- Place the baking sheet in the oven and toast the sandwiches for 3-5 minutes, until the cheese is melted. Serve immediately.
Tuna salad:
In a small bowl, flake the tuna with a fork. Stir in the celery, onion, and parsley. Add mayonnaise, mustard, and pepper to taste. Stir to distribute evenly. Add lemon juice, if using.
