Classic Hot Tuna Sandwiches topcook.tomathouse.com
Ingredients:
- 3 large (sandwich size) English muffins, cut in half horizontally
- 3 tbsp softened butter
- 2 x 340g cans albacore tuna in its own juice, drained
- 1 can (340 g) marinated artichokes, drained and chopped
- 1 cup mayonnaise
- 0.5 cup pitted Kalamata olives, chopped
- 1 tbsp. grainy mustard
- 1 tbsp chopped fresh dill
- A little hot sauce
- 3 stalks celery, finely chopped
- 2 green onions, finely chopped
- Zest of half a lemon
- 12 slices Swiss cheese
- 1 plum tomato, thinly sliced
- 2 tsp chopped chives
Preparation:
- Preheat oven to grill mode.
- Grease the halves with butter English muffins, place them in a single layer on a baking sheet and toast in the oven until golden brown, about 2 minutes.
- Meanwhile, prepare the tuna salad.:
In a large bowl, combine the tuna, artichokes, mayonnaise, olives, mustard, dill, hot sauce, celery, green onions, and lemon zest. Season with salt and pepper to taste.
- Place a generous dollop of tuna salad on each muffin half, top each with two slices of cheese, and broil until the cheese is melted, about 2 minutes. Remove the sandwiches from the oven and top with tomato slices and chives. Serve.
