Stuffed Jalapeños

Ingredients:

Preparation:

  1. Cut 6 jalapeños in half lengthwise and remove seeds.
  2. Combine 1/2 cup shredded cheddar with 1/4 cup baked beans, 2 tablespoons cream cheese, 1 teaspoon chili powder, and 1/4 teaspoon coarse salt; divide among the pepper halves.
  3. Press the pepper filling into the crushed tortilla chips and place them chip-side up on a parchment-lined baking sheet. Bake at 425°F (220°C) until the filling begins to bubble, about 12 minutes.
  4. Garnish with a dollop of sour cream and cilantro and serve!
