Ingredients:
- 12 tbsp (180 g) butter
- 2.5 cups of milk
- 35 g dry yeast
- 2 cups sifted premium flour
- 2 tablespoons of sugar
- Salt
- 2 large eggs, lightly beaten
- 1/4 teaspoon of baking soda

Preparation:
- Make brown butter: Melt the butter in a small saucepan over medium heat and cook, stirring, until golden brown, about 8-12 minutes. Skim off any foam and let sit.
- Prepare the dough: Heat 1/2 cup milk in a small saucepan over low heat until it reaches approximately 104°F (40°C). Pour the warm milk into a large bowl and add the yeast (do not stir). Let stand until foamy, about 5 minutes. Add 1/3 cup brown butter to the bowl and whisk, reserving the remaining butter for greasing the waffle iron. Continuing to whisk, add the flour, sugar, 1 teaspoon salt, and the remaining milk. Cover the bowl with plastic wrap and let it sit overnight at room temperature for the dough to rise.
- Make brown butter waffles: Preheat the oven to 120°C. Heat the waffle iron and grease it with oil. Add the eggs and baking soda to the batter and mix. Pour the batter into the waffle iron in batches and bake until golden brown. Transfer the finished waffles to a baking sheet and bake in the oven while you make the remaining waffles. When serving, drizzle the waffle sauce over the waffles.
- Orange sauce
In a frying pan, combine 3/4 cup orange marmalade, 1/4 cup water, 2 tablespoons lemon juice, and a pinch of salt. Heat, stirring, over low heat. Transfer the marmalade to a bowl, add 4 tablespoons cold butter, and beat until smooth.
- Grape sauce
Place 5 cups of seedless grapes, 1 cup of sugar, the juice of half a lemon, and 2 tablespoons of water in a frying pan. Cook over high heat until thickened, about 30 minutes. Remove from heat, add 1 teaspoon of vanilla, 3/4 cup of chopped almonds, and let cool.
- Apple-cranberry sauce
Heat a deep frying pan with 2 tablespoons (30 g) of butter. Peel and chop 3 apples, add to the pan and cook over high heat for 5 minutes.
