Ingredients:
- 4 slices whole grain bread (30g each)
- 1 teaspoon dried oregano
- 0.5 tsp garlic powder
- 4 tsp paprika
- 0.5 tsp salt
- 0.5 tsp black pepper
- 2 egg whites
- 0.5 cups skim milk
- 0.5 cups wheat flour
- 4 boneless, skinless chicken breast halves (170g), pounded to 1cm thickness.
- Olive oil (cooking spray)
- 1 jar good quality marinara sauce (about 3 1/2 cups)
- 3/4 tbsp. (90 g) grated low-fat mozzarella cheese
- 2 tbsp. l. (20 g) grated Parmesan cheese
Preparation:
- Preheat oven to 180°C.
- Place the bread in the bowl of a food processor and pulse until crumbs form, about 25-30 seconds. Transfer the crumbs to a baking sheet and bake for 12 minutes, until golden brown. (You'll get about 1 1/3 cups of toasted bread crumbs.)
- In a medium bowl, combine the breadcrumbs with oregano, garlic powder, paprika, 1/4 teaspoon salt, and 1/4 teaspoon pepper. In another bowl, whisk the egg whites and milk. In a third bowl, combine the flour and the remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper. Dredge each chicken piece in the flour, removing any excess flour, then dip the chicken in the egg, then in the breadcrumbs, removing any excess.
- Increase the oven temperature to 200°C. Place the breaded chicken breasts on a glass baking dish, spraying each side with cooking spray for 5 seconds per side. Bake until the chicken is cooked through and the bread crumbs are browned, about 15 minutes. Baste the chicken breasts. marinara sauce, sprinkle with mozzarella and Parmesan cheese, then return the dish to the oven for another 10 minutes, until the cheese is melted.
