Ingredients:
- 1 and 1/4 cups milk
- 3/4 cup pumpkin puree
- 3 tablespoons of vegetable oil
- 2 tbsp natural maple syrup + extra for drizzling
- 2 large eggs, separate the whites from the yolks
- 1 cup premium flour
- 0.5 cup whole grain flour
- 1.5 tsp baking powder
- 1.5 teaspoons pumpkin pie spice mix
- 1/4 teaspoon of baking soda
- 1/8 tsp salt
- Cooking spray
- Walnuts, chopped
Preparation:
- Preheat the waffle iron.
- In a bowl, combine the milk, pumpkin puree, vegetable oil, maple syrup, and egg yolks. In a separate bowl, combine the flour, baking powder, pumpkin pie spice, baking soda, and salt. Gradually fold the flour mixture into the pumpkin mixture and knead until smooth (do not over-knead or over-beat).
- Place the egg whites in a separate large bowl and beat with a mixer (or vigorously by hand) until stiff peaks form, 3–4 minutes. Gently fold the beaten whites into the batter with a spatula until fully incorporated.
- Lightly spray the waffle iron with cooking spray or oil, then add the batter. Cook according to the waffle iron's instructions. Serve with maple syrup and chopped nuts.
