Salad dressing made from soy miso paste and sesame oil

Ingredients:

  • 1/2 cup white miso paste
  • 1/4 cup plus 1 tbsp water
  • 1/4 cup sugar
  • 3 tbsp. l. rice wine vinegar
  • 2 tsp light soy sauce
  • 1/4 tsp coarse salt
  • 2 tbsp. peanut butter
  • 1/2 tsp. sesame oil

Preparation:

  1. In a small bowl, combine miso paste, water, sugar, vinegar, soy sauce, and salt. Whisking constantly, gradually add peanut butter and sesame oil until a creamy dressing forms. Use immediately with sushi, or store in a sealed container in the refrigerator for up to 3 days.
