Quick Thai Chicken Pizza with Peanut Sauce topcook.tomathouse.com
Ingredients:
- 1 skinless, boneless chicken breast
- 2 cups bean sprouts
- 1 cup shredded carrots
- 2 tbsp. coarsely grated mozzarella cheese
- 1 ready pizza base (340 gr.)
- Vegetable oil for frying
- Salt and ground black pepper
- 1 can (170 g) of prepared Thai peanut sauce
- 1 can (450 g) coconut milk
- 2 tablespoons cornstarch
- 2 tablespoons of water
- 1 cup chopped unsalted peanuts
- 5 chopped green onions
Preparation:
- Preheat oven to 190°C.
Heat a frying pan over medium-high heat. Add enough oil to lightly coat the bottom of the pan. Season the chicken breasts with salt and pepper and fry until cooked through, about 5 minutes per side. Cut into small cubes.
- In a medium saucepan, heat the peanut sauce and coconut milk. Combine the cornstarch and water and add to the peanut sauce. Bring to a boil to thicken the sauce, then remove from heat and let cool.
- Roll out the pizza dough and place it in a 25cm diameter pizza pan.
Spread peanut sauce on pizza crust. Top with peanuts, half the green onions, chicken, half the carrots, and 1 cup of bean sprouts. Top with cheese, the remaining green onions, carrots, and sprouts. Bake until the cheese is melted and the crust is golden brown, about 15-20 minutes.
