Golden Champagne Cocktail

Ingredients:

  • 4 large ribbed oranges (Navel variety)
  • 8 sprigs of rosemary
  • 750 ml chilled champagne (1 bottle)
  • 60 ml. Campari

Preparation:

  1. Using a vegetable peeler, cut eight 12-cm-long strips of orange peel. Be sure to remove only the orange peel, leaving as little of the white inner part as possible.

    Cut each sprig of rosemary into 10 cm pieces. Remove the leaves from the bottom 1 cm wide of the sprigs, exposing the stems.
  2. Roll each orange peel strip from one end to the other like a rose, with the cut side facing inward. Pierce the twisted peel with a rosemary stem to secure both ends of the orange rose.

    Pour champagne into eight glasses (about 100 ml per glass). Top with Campari (about 15 ml). Place a sprig of rosemary and orange zest in each glass.
