Potato Ball Casserole with Cheese and Bacon

topcook.tomathouse.com

Ingredients:

  • 450 g (about 3 cups) frozen potato balls
  • 4 slices of bacon
  • 1 tbsp. grated cheddar cheese (about 115 g)
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • Freshly sliced chives for decoration
  • Non-stick cooking spray

Preparation:

  1. Prepare the potato balls according to package directions. Reduce the oven temperature to 200°C (400°F) and lightly spray a 22cm (9.5in) baking dish with cooking spray.
  2. Cook the bacon in a small skillet over medium heat, turning once, until crisp, about 8 minutes. Transfer to a paper towel-lined plate, then slice.
  3. Place the potato balls in the prepared pan, pressing lightly. Top with cheese and bacon. Bake for about 5 minutes, until the cheese is melted.

Meanwhile, combine the sour cream, mayonnaise, and Sriracha sauce. Drizzle the casserole with the spicy mayonnaise and sprinkle with chives.
