Spicy Purple Potato Salad

Preparation:

Boil 1 kg (2.3 lb) small purple potatoes in salted boiling water with 1 teaspoon (0.5 tbsp) white vinegar for about 12 minutes; drain. Cut the potatoes into halves or quarters and toss with the juice of 2 limes, 1 teaspoon (0.5 tsp) ground cumin, and 1/2 teaspoon each (0.5 tsp) dried oregano and paprika.

Add 1 cup diced yellow bell pepper, 1 small minced jalapeño, 1/3 cup chopped cilantro, and 1/4 cup olive oil. Season the salad with salt and toss. Top with fresh cheese.
