Mashed Potatoes with Cheddar topcook.tomathouse.com
Ingredients:
- 900 g unpeeled yellow-skinned potatoes
- 220 gr. spicy cheese Cheddar
- 220 g of bacon
- 1 cup of hot milk
- 60 g - 120 g butter
- 1/4 cup chopped herbs (parsley, green onions)
Preparation:
- Place the potatoes in a saucepan of cold water, add salt, and bring to a boil. Simmer for 45 minutes. Drain and peel.
- Render the bacon fat in a skillet over medium heat. Cut the bacon into slices and season with salt. Reserve the rendered fat in 2-4 tablespoons of water. Replace half of the butter with the rendered bacon fat; use all the butter, if desired.
- In a bowl, mash the potatoes until smooth. Stir in the cheddar and herbs, and season with salt and pepper.
- In a separate bowl, heat the milk and butter. Add to the mashed potatoes and stir. Divide the mashed potatoes among the servings and sprinkle with bacon.
