Sweet Pepper Jack-o'-Lantern with Macaroni and Cheese

Ingredients:

  • 6 medium orange bell peppers
  • 220 gr. macaron cones
  • 1.25 cups drinking cream 10% fat
  • 220 g of cream cheese at room temperature
  • 110 gr. grated cheddar cheese (about 1.5 cups)

Preparation:

  1. Bring a large pot of salted water to a boil. Fill a large bowl with ice water.
  2. Cut off the tops of the peppers and set aside. Remove the seeds and membranes. Place the peppers and tops in boiling water and cook until just tender, 2-3 minutes. Drop the peppers into ice water. Once cool, remove them and use a knife to carve a Jack-o'-lantern face into one side of each pepper.
  3. Bring the water back to a boil, add the pasta, and cook until al dente, about 6 minutes. Reserve 1 cup of the pasta cooking water; drain the rest (do not rinse the pasta).
  4. Heat the cream in a large saucepan over medium heat until it begins to simmer. Continue to simmer until there are three-quarters of a cup remaining, about 10 minutes. Add the cream cheese and stir until melted. Stir in the cheddar, allowing it to melt to create a smooth sauce.

    Turn off the heat, add the pasta, and stir. Add a little of the reserved pasta water to thin the sauce if needed. Season with salt to taste. Let sit for 10 minutes, then spoon the macaroni and cheese into the prepared peppers and top them with the trimmed tops.
