Ravioli salad

Ingredients:

  • 1/4 red onion, thinly sliced
  • 250 g frozen ravioli with cheese
  • 1 tbsp. l. olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, grated
  • 1/2 tsp lemon zest
  • Salt and freshly ground pepper
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup chopped olives
  • Chopped parsley

Preparation:

  1. Pour cold water with ice over the onion and leave for 20 minutes, then drain the water.
  2. Meanwhile, boil the ravioli in plenty of salted water until tender. Drain in a colander and rinse under cold water.
  3. In a large salad bowl, combine olive oil, lemon juice, garlic, lemon zest, salt, and pepper to taste. Add the ravioli, onion, cherry tomatoes, olives, and a little parsley, and toss to combine.
