Green beans with lemons and capers topcook.tomathouse.com
Ingredients:
- 500 g of green and wax beans
- 3 cloves garlic, chopped
- 2 tbsp. capers
- Zest and juice of 1 lemon
- Olive oil
- Salt and freshly ground pepper
Preparation:
- Place green beans in boiling salted water and cook for 6 minutes, until tender, drain.
Grind the garlic, capers and zest in a mortar, transfer the paste to a preheated frying pan with olive oil and fry under the lid for 2 minutes.
Add lemon juice and bring to a boil. Then add the green beans and continue cooking, stirring, for another 2 minutes. Season with salt and pepper to taste.
