Homemade yogurt with apple compote topcook.tomathouse.com
Ingredients:
Yogurt
- 4 cups of full-fat milk
- 1/4 cup nonfat dry milk
- 1/4 cup maple syrup (optional)
- 1/4 cup fresh yogurt, or starter with active cultures
Apple compote
- 6 cups peeled and diced green apples
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- A pinch of salt
- 1/4 cup water
Preparation:
- Prepare apple compote: Combine apples, brown sugar, vanilla extract, ground cinnamon, salt, and 1/4 cup water in a heavy-bottomed saucepan. Cook, stirring, over medium heat until apples are softened, about 30 minutes.
- Make homemade yogurt: Heat the milk (the milk should simmer, but not boil) in a large saucepan over low heat to 85°C (185°F). Remove from the heat and slowly whisk in the dry milk and maple syrup. Cool the milk mixture to 40°C (104°F), for 20-30 minutes. Mix with plain yogurt.
- Pour the milk mixture into a glass bowl. Cover with plastic wrap and poke a few holes. Place in a warm place (30-40°C) for 12-18 hours. (The longer you leave the milk mixture, the thicker the yogurt will be.)
- Refrigerate the yogurt for 8 hours to chill. Stir in the apple compote before serving.
