Slow Cooker Pork Ribs with Chipotle Peppers

Ingredients:

  • 1 slab of pork ribs weighing 1.3 - 1.8 kg, cut in half
  • 1 tbsp. vegetable oil
  • 2 tablespoons dark brown sugar
  • 1 tbsp chipotle chili powder
  • 1 tbsp. l. ground cumin
  • 1 tbsp. l. dried oregano
  • 3/4 cup chipotle barbecue sauce
  • 1/4 tbsp. agave nectar
  • Fresh cilantro, lime wedges, cornbread, for serving

Preparation:

  1. Season the ribs with salt and black pepper, then brush with vegetable oil. In a small bowl, combine brown sugar, ground chipotle pepper, cumin, and oregano. Sprinkle the spice mixture over the ribs and rub it into the meat. Transfer the ribs to a 6-8 quart slow cooker. Cover and simmer on low for 7.5 hours.
  2. Preheat the oven to broil and line a baking sheet with foil. In a bowl, combine the barbecue sauce and agave nectar. Transfer the ribs to the prepared baking sheet and brush both sides with half the barbecue sauce. Flip them bone-side down and broil until the glaze is bubbling and golden brown, 3-5 minutes.
  3. Cut the ribs between the bones and sprinkle with cilantro. Serve with lime wedges. cornbread and the remaining barbecue sauce.
