Baked cauliflower with tomatoes

Ingredients:

  • 7 cups small cauliflower florets
  • 3 plum-shaped tomatoes, coarsely chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1.5 tsp Roman cumin seeds (cumin)
  • 1/4 teaspoon turmeric
  • Pinch cayenne pepper
  • 1/2 tsp salt
  • Freshly ground pepper
  • Juice of 1 lemon
  • Chopped cilantro

Preparation:

  1. Preheat oven to 250°C. Toss cauliflower and tomatoes with olive oil, then stir in garlic, cumin, turmeric, cayenne pepper, and salt and ground pepper to taste. Spread the mixture on a baking sheet. Place in the oven and bake for approximately 20-25 minutes. Drizzle with lemon juice and sprinkle with cilantro.
