Ingredients:
- 0.5 cup ground walnuts
- 1 tbsp vegetable oil, plus 1/3 cup, plus a little more for greasing the waffle iron
- 3 slices (110g) pancetta bacon (cured pork belly with herbs), about 0.5cm thick, cut into 0.5cm cubes.
- 3 cups dry baking mix Belgian waffles
- 2 eggs
- 1.5 cups of water
- 1.5 tsp ground cinnamon
- 0.5 tsp coarse salt
- 0.5 tbsp. maple syrup
Special equipment:
- Waffle iron for making Belgian waffles
Preparation:
- Preheat oven to 180°C. Spread the nuts evenly on a baking sheet. Bake for 10-12 minutes, until toasted. Set aside to cool.
- Preheat and lightly grease a waffle iron.
- Heat oil in a medium skillet over medium-high heat. Add the bacon and cook until crisp and browned, 3 to 5 minutes. Transfer the cooked bacon to a paper towel-lined baking sheet to cool.
- In a large bowl, combine the waffle batter, eggs, vegetable oil, cinnamon, salt, and water. Using a whisk, mix the ingredients until smooth. Stir in the bacon. Pour the mixture into a waffle iron; refer to your waffle iron's instructions for the amount of batter needed for one waffle. Cook the waffles for 3 to 4 minutes, or until golden brown.
- Place the waffles in serving bowls. Sprinkle with nuts and drizzle with a little maple syrup. Serve immediately.
