Ingredients:
- 1/2 cup sliced dried apricots
- 1/2 cup sliced dried cherries or raisins
- 3 strips of lemon zest
- Juice of 1 lemon
- 1 tbsp. sugar
- 1 tube cinnamon
- 2 oranges, peeled, divided into segments, membrane removed
- 2 pears, cut into slices
- A pinch of ground vanilla
- Yogurt, for serving
Preparation:
- Combine dried apricots, dried cherries, lemon zest, lemon juice, sugar, cinnamon stick, and 2 tablespoons of water in a microwave-safe bowl. Microwave for 30 seconds. Stir in oranges and pears, add a pinch of vanilla, and let the salad sit for 30 minutes.
- Serve fruit salad with yogurt.
