Ingredients:
Pork
- 700-900 g pork tenderloin
- 2 cups buttermilk
- 3 tbsp. spicy sauce for marinating meat
- 4 cups peanut butter
- 1 cup flour
- 4 large eggs, lightly beaten
- 3 cups garlic croutons, crushed
Assembling a sandwich
- 4 large buns, split and toasted
- Pickled cucumber slices and iceberg lettuce leaves
Preparation:
- Cooking pork: Cut the tenderloin into quarters; using a meat mallet, pound each piece until it is about 6 inches wide. Combine the buttermilk and marinade and place in a baking dish, add the pork, cover with plastic wrap and marinate overnight or up to 2 days.
- In a large, deep saucepan, heat the peanut oil over medium heat to 180°C. Remove the pork from the marinade and season with salt and pepper.
- Make a three-layer breading using flour, eggs, and croutons, placed in separate shallow bowls. First, place the pork pieces in the flour and coat thoroughly. Dip the pork in the egg and let the excess drip off, then roll in the breading until the meat is completely coated.
- Fry the pork in batches until golden brown, 4 to 5 minutes. Drain on paper towels.
- Make aioli sauceIn a small bowl, combine mayonnaise, habanero salsa, and granulated garlic. Season with salt.
Assemble the sandwich: Place crispy pork on toasted buns Top with small slices of pickles, shredded lettuce, and a drizzle of aioli. Serve with extra sauce.
