Sweet Potato Casserole with Glazed Nuts topcook.tomathouse.com
Ingredients:
- 5 tubers sweet potatoes medium size, well washed
- 4 bananas, unpeeled
- 250 g of butter at room temperature
- 1/4 cup honey
- 1/2 cup flour
- 3/4 cup brown sugar
- 1.5 cups chopped pecans
Preparation:
- Preheat oven to 190°C.
- Prick the sweet potatoes all over with a fork, place them in a roasting pan, and roast for 30 minutes. Add the bananas to the roasting pan and continue roasting for 10-15 minutes, until the bananas and potatoes are very soft. Remove the roasting pan from the oven, but leave the oven running.
- When the potatoes are cool enough to handle, scrape the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 110g of butter and honey. Season with salt and beat vigorously with a wooden spoon until the ingredients are combined and the mixture is fluffy. Spoon into a heatproof serving dish and smooth the surface.
- In a separate bowl, use your fingers to crush the remaining 4 oz (110 g) butter, brown sugar, flour, and pecans until they form coarse crumbs. Sprinkle the streusel over the mashed potatoes and return them to the oven.
- Bake for about 20 minutes, until the nut topping is golden brown. Serve the sweet potato casserole hot.
