Ingredients:
- 650-700 g of ground lamb, beef or veal
- 1/2 cup canned chopped roasted red peppers in oil
- 4 slices Manchego cheese or any hard cheese made from sheep's milk
- 4 tbsp olive oil, plus more for greasing
- 9 slices olive bread, lightly toasted
- 2 cloves garlic, minced
- 1/4 cup sliced almonds
- 1 tbsp. sherry vinegar or red wine vinegar
- 1 tsp smoked paprika
- Coarse salt
- 2 shallots, finely grated (about 1/4 cup onion puree)
- Green salad leaves
Preparation:
- Prepare the pepper sauce: Heat 2 tablespoons of olive oil in a skillet over medium heat. Cut the crust off one slice of bread and tear the bread into 2.5 cm pieces. Add the bread to the skillet along with the garlic and cook until golden brown, about 2 minutes. Add the almonds and continue to cook for another 3 minutes, until golden brown.
Transfer the nut bread to a food processor or blender, add the roasted peppers, vinegar, the remaining 2 tablespoons olive oil, 1/2 teaspoon paprika, and 1/4 teaspoon salt, and process coarsely.
- Prepare cutlets: In a bowl, combine the ground meat, shallot, 1 teaspoon salt, and the remaining 1/2 teaspoon paprika. Form the ground meat into four round patties, 2.5 cm thick.
- Heat a large nonstick skillet over medium-high heat. Brush the skillet with olive oil, add the patties, and cook for 4 to 5 minutes. Flip the patties over and top with a slice of cheese; continue cooking for another 4 to 5 minutes.
- Collect hamburgers: Spread the pepper sauce on eight slices of bread. Place a lettuce leaf on each of the four slices, then the patties, and carefully cover with the remaining slices of bread.
