Ingredients:
- 1 pack (2 cups) coarsely grated provolone or Monterey Jack cheese
- 4 beaten chicken breast fillets (225 g)
- 1 serving pizza dough
- 1/2 cup duck sauce or plum sauce
- 1/2 tsp crushed red pepper flakes
- 1/2 red bell pepper, thinly sliced
- 1 tbsp. vegetable oil
- 2 tablespoons soy sauce
- 1 tbsp (slightly heaped) peanut butter
- 2 tsp hot sauce
- 2 tsp grill seasonings
- 2 tablespoons of honey
- 2 tablespoons rice wine vinegar or apple cider vinegar
- 1/4 seedless cucumber, peeled and sliced into thin matchstick-sized sticks
- 4 chopped green onions
- 1 cup bean sprouts (a couple of large handfuls)
- A handful of chopped coriander leaves
- 1/4 cup (55 g) chopped peanuts
Preparation:
- Preheat oven to 220°C.
Form the crust in a pizza pan or on a baking sheet. Spread plum sauce or duck sauce over it, applying it like you would a regular pizza sauce. Sprinkle the pizza with a few red pepper flakes, then provolone cheese and bell pepper.
Bake until the base is golden brown and the cheese is bubbly, 15 to 17 minutes.
- Heat a grill pan over medium-high heat. Combine vegetable oil, soy sauce, and peanut butter with hot sauce and grill seasoning. Soften in the microwave. peanut butter, if it is too cold to mix it with the sauce (10 seconds will be enough).
Add the chicken and coat it evenly with the mixture. Let it rest for 10 minutes, then fry the chicken for 2-3 minutes on each side, until it's firm. Slice the chicken into thin strips.
- While the chicken is cooking, combine the honey, rice vinegar, and cucumber. Mix well.
Top the hot pizza with chicken, green onions, bean sprouts, and cilantro. Drain the cucumbers and sprinkle them over the pizza. Garnish with peanuts, cut into 8 wedges, and serve.
