Taco Pie

Ingredients:

  • 3 tablespoons of vegetable oil
  • 8 tortillas (recipe) corn tortillas, recipe wheat tortillas)
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • Pinch cayenne pepper
  • 350 g of minced pork
  • 400 gr. pureed tomatoes
  • 250g canned chopped green chili peppers
  • 1 cup frozen corn kernels
  • 1/2 cup chopped fresh cilantro
  • 1 cup shredded mozzarella cheese
  • Salt

Preparation:

  1. Preheat oven to 200°C. Heat vegetable oil in a large skillet over medium-high heat. Place tortillas in the skillet and fry on both sides until golden brown, about 3 minutes. Then transfer tortillas to paper towels.
  2. Add the onion to the skillet and cook, stirring, until softened, about 3 minutes. Add the garlic and cayenne pepper and cook for 30 seconds. Add the ground pork and 1/4 teaspoon salt and cook, breaking up the ground pork, until browned, about 4 minutes. Stir in the tomatoes, chili peppers, and corn. Bring to a simmer and cook until the sauce thickens slightly, about 3 minutes. Season with salt to taste. Remove the skillet from the heat and stir in the cilantro.
  3. Place half of the tortillas in a 22-25 cm round pie pan. Top with half the filling, then half the cheese. Continue layering in the same order, finishing with the cheese layer. Cover. savory pie foil and bake until the cheese is melted, about 10 minutes.
