Avocado, Watercress, and Orange Salad topcook.tomathouse.com
Ingredients:
- 2 bunches watercress
- 2 avocado, cut into slices
- 2 oranges, peeled and core removed
- 1/4 red onion, thinly sliced
- 1/4 cup orange juice
- Juice of 1 lime
- 1 tbsp. honey
- 1/2 tsp salt
- 2 teaspoons Dijon mustard
- Freshly ground pepper
- 3 tbsp. l. olive oil
- Chopped roasted hazelnuts
Preparation:
- Cover the red onion with cold water and let it sit for 10 minutes. In a separate bowl, combine the orange and lime juice, honey, mustard, olive oil, salt, and pepper to taste.
- Remove the onion from the water and place it in a salad bowl. Add the watercress, avocado, oranges, salad dressing and mix.
Sprinkle the salad with hazelnuts.
