Matar paneer - cheese with green peas

Ingredients:

  • 225g, cut into 1cm cubes. paneer cheese
  • 1/2 cup vegetable oil
  • 1 onion, cut in half
  • 2 coarsely chopped cloves of garlic
  • A 2.5cm piece of ginger, roughly chopped.
  • 2 packs (300 g) frozen green peas
  • A little salt
  • 1 teaspoon turmeric
  • 1 teaspoon of the mixture Garam masala
  • 1 tsp tomato puree
  • 1 cup vegetable broth
  • Additional equipment: food processor

Preparation:

  1. Heat oil in a large frying pan and add the cheese cubes in two batches. Fry the paneer until golden brown. Transfer the golden cubes to a folded kitchen towel. (You can fry the paneer cubes in a dry frying pan to prevent oil splatter. Then cook as per the recipe.)
  2. Pour all but 2 tablespoons of oil into a saucepan. Place the onion, garlic cloves, and ginger in a food processor and pulse until finely chopped. Gently fry for about 5 minutes, seasoning with salt. Add the garam masala and turmeric and cook for another 2 minutes, then add the still-frozen green peas.
  3. Dissolve tomato puree in vegetable broth and pour this mixture over the contents of the pan. Stir again and reduce the heat to low. Cover the pan with foil or a lid and cook for 15 minutes, tasting to see if the peas are tender.

    If you want, you can finish cooking at this stage by removing the lid and then gently reheating the pan with the fried cheese cubes, or continue cooking. In this case, remove the foil and add the paneer cubes to warm through before serving.
